Ingredients
- 1 cup carrot
- 1 cup turnip
- 1 cup rutabaga
- 1 cup green cabbage
- ½ cup sweet onion
- 3 tbsp apple cider vinegar
- 1 tbsp olive oil
- 1 tbsp raw honey
- 1 small clove garlic
- 1 teaspoon celery seed
- ½ tsp cayenne
- 2 cups dates or sweet cherries
- 1 head lettuce
Mid Winter Salad:
Slice carrots, turnips and rutabaga into “matchstick” size strips. Shred cabbage. Thinly slice the onion. Mince garlic. Chop (and pit if necessary) dates or cherries. Separate head of lettuce into full leaves.
Combine all ingredients except the dates or cherries and lettuce in a large bowl and toss until well-mixed.
Cover and refrigerate for a minimum of 1 hour or up to 4 hours.
Before serving, toss in the dates or cherries.
Serve on a lettuce-lined plate.
