Ingredients
- 1 cup fresh carrot juice
- 6 large carrots
- 5 cups AVM Broth or water
- 1 large onion, peeled and chopped
- 1 tsp nutmeg
- 6 tbsp fresh ginger, grated
- 1 tsp parsley, chopped
Carrot-Ginger Soup: Combine all ingredients and simmer on low for 20 minutes or until carrots are tender. Puree in blender if desired.
