Ingredients
- Any combo of mixed greens
- ⅔ cup dried cranberries
- ⅓ cup hot water
- 2 tbsp apple cider vinegar
- 2 tbsp fresh lemon juice
- 1 tbsp pure maple syrup
- 3 tbsp olive oil
- Pinch of dulse or kelp
Green Salad with Cranberry Vinaigrette
Use any combination of mixed greens, such as baby greens, spinach, arugula, kale, romaine, etc.
Dressing: Soak dried (unsweetened) cranberries in hot water for 10 minutes or until soft; puree in blender.
Whisk soaked cranberries with apple cider vinegar, lemon juice, maple syrup, olive oil and dulse or kelp. Toss with greens and serve.
